Q: Why doesn't boiling water reach 100°C?
A: The boiling point varies with altitude; the higher the altitude, the lower the atmospheric pressure, and thus the lower the boiling point. Additionally, since boiling water is not in a sealed space, most steam rises, so measuring around 98-99°C while boiling is normal.
Q: Why is the temperature only 90°C, or even less than 90°C, when I pour freshly boiled water into a pour-over kettle and then measure it?
A: Because the pour-over kettle is at room temperature, when hot water is added, the container absorbs heat. The less water added, the lower the temperature will be.
